Fourth of July Salad

Freshen your July 4th salad up with a burst of fruit flavor.

A lot of times the best tasting foods are the ones that surprise us or are served out of their usual context.  This Fourth of July try putting a little color into your salad using fruit.  It's easy, the fruits are in season, and they add a nice twist to a summer time salad.  One of my favorites (especially if I'm in a hurry) is a very red, white, and blue spectacular. 

Ingredients

1 Pack of Spring Mix Lettuce
7 Strawberries
Approx 15 Blueberries
½ Cucumber
3 T Feta cheese
4 Cherry Tomatoes
3 T sliced Almonds
Balsamic Dressing to taste


Directions


Rinse lettuce and fruit!
Slice Strawberries
Slice Cucumber
Put lettuce on the bottom of your favorite salad bowl
Add all ingredients on top
When ready to serve add dressing and mix together

Put whatever kind of lettuce you enjoy (I use spring mix) then add sliced strawberries, blueberries, cucumber, feta cheese, cherry tomatoes, sliced almonds served with a balsamic dressing.  This salad is sweet, sour, and has some crunchy bits for texture.
